Now a classic with four locations in Colorado, Jax Fish House and Oyster Bar opened its first out-of-state location in Kansas City. Owner and prolific restaurateur Dave Query, the man behind Lola, The Post Brewing Co., and Centro, among others, launched the new 5200 square-foot space located at 4814 Roanoke Parkway in the Polsinelli law firm building yesterday.

To facilitate the out-of-state expansion, Query brought on a few familiar faces to the Kansas City dining scene. Among them are executive chef Bobby Bowman, formerly of delish! Catering & Events, executive pastry chef Kelly Conwell, and bar manager Kenny Cohrs. Joining the KC veterans is Rick Compton of Jax in Boulder, who made the trek East to act as general manager and wine director.

In addition to an authentic raw bar featuring fresh oysters, clams and Alaskan King crab, Jax also introduces a new perspective to the KC community. A partnership with the Monterey Bay Aquarium Seafood Watch program enables Jax to focus on the sourcing of its menu items, ensuring they are environmentally responsible and sustainable. Jax is the only restaurant in Kansas to have earned this distinction.

The restaurant chain sources its Emersum oyster out of Chesapeake Bay in eastern Virginia. There, Rappahannock River Oyster Company harvests the "proprietary and wholly sustainable"  oyster in a consistent and responsible manner, ensuring certainty of product quality for the ever-expanding restaurant. Although Jax is known for its seafood, non-seafood dishes are always available and sourced with local ingredients.

Specialty wines, craft beers and cocktails, house-made sodas and after-dinner spirits will all be featured on the beverage menu. The Jax-Sineann Pinot Noir, bottled exclusively for Jax by Sineann Winemaker Peter Rosback is a blend made from single-vineyeard lots with the best fruit in northern Oregon. The wine is currently on its fourth vintage, with the fifth arriving in early 2015.

Happy Hour is offered daily from 4 to 6 p.m. and all night on Mondays. Operating hours for dinner are Monday through Thursday 4 to 10 p.m.; Friday and Saturday 4 to 11 p.m.; and Sunday 4 to 9 p.m. Walk-ins are welcome and reservations accepted.
