Historic Tivoli Brewing Location to Open in 2015

Tivoli Brewing Company has signed a long-term lease for 8,000 square feet of space inside the Tivoli Student Union building, located on the Auraria campus, Cafe Society reports. Tivoli will open a brewery and taproom in the historic building in early 2015. In a partnership with Metropolitan State University of Denver, hospitality students in the beverage-management program will work there as an out-of-the-classroom experience.

The brewery, originally founded in 1900, became one of the largest beer-makers in the nation, producing 150,000 barrels a year before shutting down in the late sixties. In 2012, owner Corey Marshall bought the Tivoli name. When it opens, the taproom will serve historic beers, a selection from local, small craft breweries, and small plates, sandwiches, salads, and soups.
