Metropolitan Bar & Grill To Open in Englewood

The new venture is set to be neighbors with Street Kitchen Asian Bistro and Marco's Coal-Fired Pizza.

Denver's neighbors to the south will gain a new restaurant with the opening of Metropolitan Bar & Grill within the Vallagio at Inverness development in Englewood. If all goes smoothly, owner Darien Fischer anticipates a mid-January debut.

Fischer and his wife, Janine, are bringing the urban American eatery as first-time restaurant owners. "We've always wanted to own a restaurant and be in the restaurant business, learning about the business as well as food and drinks. It's just very interesting to us and we love that," Fischer says.

The pair started looking for a space at the beginning of the year, and "got lucky" with the location at the Vallagio. Fischer had previously worked in the Denver Tech Center for 10 years, so they gravitated toward spaces in the vicinity.

With existing neighbors like Marco's Coal-Fired Pizza and Street Kitchen Asian Bistro, the menu at the Metropolitan aims to complement those options by offering casual fare like burgers, salads, and sandwiches at lunch. Dinner will see a focus on roast chicken, steak, pasta, and seafood.

The bar menu is still in development, but expect a range of Colorado craft beer, wine, and cocktails—including specialty offerings and martinis. Daily specials are also something Fischer is contemplating, but will be finalized closer to opening.

Metropolitan Bar & Grill is located at 10111 Inverness Main Street in Englewood, and will be open Sunday through Thursday from 11 a.m. to 10 p.m. and Friday and Saturday from 11 a.m. to 11 p.m. Lunch and dinner are the only meals planned to start, but brunch may be added down the line.
