David Burke, the New York City chef whose empire includes seven restaurants, announced that he will open the Huckleberry Hall, a lounge and nightlife destination in Aspen's historic core. Huckleberry Hall complements the chef's David Burke Kitchen, a restaurant slated to open in Aspen in March at the corner of Hopkins and Galena.
Commemorating Colorado's native huckleberries and Doc Holliday's famous "I'll be your huckleberry" quote, the venue will be a warm subterranean refuge for guests seeking a drink and small bites after 5 p.m. on a daily basis.
Huckleberry Hall will offer signature cocktails handcrafted from house-made juices, bitters, and syrups, featuring locally sourced spirits and ingredients when possible. The bar will also offer a selection of craft brews and curated wines. Signature cocktails may include the Honey Badger, made with Spring 44 Honey Vodka, lemon, cinnamon and apple honey syrup, and black pepper. Another signature drink is the Rabbit Hunter made with Bulleit Bourbon, fresh mint, lime, and Fever Tree natural ginger beer.
The food menu will offer small and share plates created by executive chef Matthew O'Neill. Among the offerings will be items like the chicken dumplings with cowboy coffee barbecue and tobacco onion rings and fried oysters with Brussels sprout fondue and spicy aioli. There will also be charcuterie, cheese boards, and seasonal dishes. And the venue will host music- live or a DJ, depending on the evening.
