Walnut Restaurant Group, known for its Boulder restaurants the Med and Brasserie Ten Ten will open a third Boulder venture at 915 Pearl Street, in less than 13 months.
This undertaking will be an upscale Italian eatery in a space that will replace the old Tesla building. A brand new 21,604-square-foot mixed-use development will be built with this restaurant occupying the first level and four condominiums taking up two additional stories.
In 2008, Frasca Food and Wine was to move here, but that deal fell through and the Friulian-inspired restaurant remodeled and expanded its original space on the East side of Pearl Street.
Eater spoke with Greg Topel, director of operations for Walnut Restaurant Group, who shared that this third restaurant will be "quite different" than the others, but it will follow the group's philosophy of providing high quality service and great food. An elegant aesthetic, hand-designed by owner Peg Romano herself, will be featured in the space that will seat up to 150 guests, 120 inside and an additional 30 on the patio. Why else it this new venture different? It will be built from scratch. The group's existing restaurants simply took over existing spaces; now there is an opportunity to build something from the ground up.
Although Topel was not ready to share the restaurant's name itself, he did exclusively tell us that if you look up the word "pearl" in Italian, "you'll be pretty close." Our money is on La Perla .
