Hosea Rosenberg Will Open Blackbelly Market

It has been a long time coming: Chef Hosea Rosenberg will open a restaurant and butcher shop in Boulder by the end of the summer. Late July- early August, Blackbelly Market, will make its debut in East Boulder, off Arapahoe and 55th, neighboring hot spots like BRU, Ozo Coffee, and Pica's, all very close to Avery Brewing.

In a 3,300 square foot space, Rosenberg will unveil his new eatery, complete with a bar and catering commissary and a bonus food truck. A big open kitchen is where the chef will prepare meats and veggies from his farm to be served seven days a week for lunch and dinner.

BMBUtcherpaper.pngA significant butchery program will accompany the restaurant. There will be a refrigerated butchery room for whole animal breakdown and sausage-making, from where fresh daily cuts - custom ones available- will be offered. A custom salumi case will dominate the middle off the space, showing off house-made charcuterie. Along with the meats, private label provisions will be sold.

BlackbellyMarket.pngBonus: the cocktail program at Blackbelly Market will be curated by James Lee, who recently became the sole owner of the Bitter Bar. In return, Rosenberg will provide the food at the reimagined Boulder bar.

The restaurant will seat up to 85 guests inside. Two patios will provide capacity for an additional 60, give or take. There will be seating at the counter by the kitchen, and a grab and go counter at the front. Breakfast may be added to the offerings down the road, while brunch is a certainty from the get-go.
