The newest addition to RiNo's booming coffee scene will be Ink! Coffee. The Aspen-born coffee shop and roaster will occupy a building right across the street from Crema Coffee House at Larimer and 28th. In 2,000 square feet inside and a sprawling 3,000 square foot yard, owner Keith "Herbie" Herbert plans to house some of the roasting operations, a coffee house, and the company's headquarters.
"We want to be part of the coffee culture in RiNo, another stop for people looking for locally roasted and independently owned coffee shops," Herbert said.
"It's great to see what a coffee hub places like Crema and Huckleberry and Novo have created in this neighborhood and we are happy we'll be a part of it," he added.
More than coffee, Ink! will build some games in its large yard, including a bochi ball court and hoop. This will be Ink!'s tenth Denver-area outpost and it will open mid-summer, most likely in July.
