By the time all the snow will have melted in May, Aurum Food and Wine will open its doors in Steamboat Springs. Located along the river in the former Sweetwater Grill space at 811 Yampa Street, Aurum is the brainchild of Phillips Armstrong.
The seasoned hospitality veteran and creator of Hush Concepts, a supper club, enlisted executive chef Chase Wilbanks, a CIA grad and former executive sous chef of Shanahan's Steakhouse in Denver to lead the new restaurant's kitchen.
John Witmer, former sommelier at the historic Stanley Hotel, will serve as beverage director and his wine list will feature predominately regional American, Burgundy and Italian varietals as well as selections from Aurum's own Colorado Vineyard helmed by winemaker Joe Buckle. A seasonal crafted cocktail program will highlight classic drinks as well as twists on traditional standards.
Aurum plans to spotlight local products that are at the peak of freshness. Guests can expect seasonal new American cuisine, served in a refined yet relaxed space that includes a bar, dining room, and spacious deck seating.
