The former Avanti Print & Graphics building at 32nd & Pecos in LoHi, across the Highland Gateway Park from Prost Brewing, will soon become Avanti Food & Beverage. A collective eatery, the new venture is brainchild of local restaurant entrepreneurs Patrick O'Neill, founder of Choppers Custom Salads and The Club in Vail and Brad Arguello, co-founder of Uber Sausage.
The building will be updated to house eight self-contained "restaurants" in modified 8'X20' shipping containers outfitted with state-of-the-art kitchens. Patrons can pick their own table within the communal dining space and then walk around to explore the options and choose plates from one or more chef containers.
The concept is meant as an incubator for chef-driven restaurants, allowing both established and up-and-coming chefs and restaurateurs the chance to test, prove and potentially roll out unique kitchen concepts, without the risk and commitment of a build-out and new location.
Avanti Food & Beverage is slated to open in early 2015.
