Get ready to have a new favorite restaurant: Stoic & Genuine. This fourth restaurant owned and operated by chef Jennifer Jasinski and partner Beth Gruitch opens its doors to the public today in the highly anticipated Union Station project. It may still look like a construction zone outside — and inside a lot of the train terminal — but the inside of the 62 seat restaurant is shiny, new, and ready to make you want to return multiple times a week.
The cozy and classic interior is designed by local Boss Architecture. The showpiece of the space is the exhibition kitchen flanked by a fresh bar with an ever-changing selection of shellfish. Clean lines and ocean-like hues from dark blues to vibrant greens provide the backdrop for elegant finishes and unique architectural elements.
Highlights include the original art octopus mural hand painted by Denver artist Lui Ferreyra splashed from one wall of the restaurant onto another- the "float wall" at the back of the space. Across from the entry, there is glass "sandwich" of green and blue reclaimed fishing net floats gathered from the beaches of Alaska, LED lighted from above and below. The ceiling backdrop of classic beach sand fencing stained with a recycled combination of iron filings and vinegar reminds some guests of lobster cages. Local millwork company Fin Art Co contributed several of the interior elements including the "float wall", a unique wine wall, the sand fencing, host stand and the raw bar and cocktail bar counter tops from solid reclaimed wood, sanded, stained and finished.
The menu changes at this restaurant a little bit every day, but this is what the crew is starting off with.
The bar program, curated by Beth Gruitch and general manager Alaina Silva, a Rioja veteran, feature an exciting granita bar, creative cocktails, and an extensive selection of grower champagnes by the glass and bottle.
The restaurant, located at 1701 Wynkoop Street, will be open for lunch and dinner daily from 11 a.m. serving food Sunday-Thursday until 10 p.m. and Friday-Saturday until 11 p.m. The bar will remain open one hour after these times. You can make a reservation right now at 303.640.3474.
