It's been a long time in the making (the venture was planned to open in April), but Project Pie is finally baking pizzas on the Hill in Boulder. Housed in a space that was home to Pickled Lemon, the new casual eatery offers custom-built, stone-hearth fired pizzas made in less than five minutes. Guests can create their own original pizzas – from the sauce to the toppings – prepared just the way they like it, in an environment reminiscent of Chipotle.
"Chipotle is one of my favorite places," Markham told Eater back in March. Project Pie, founded in 2012 aims to follow that model. I tested it for months in test kitchens, burned some pizzas, looked for a certain flavor profile and something that would cook very fast, and found the best formula," he added.
This is not Markham's full rodeo. The serial entrepreneur created and launched MOD Pizza in Seattle and Pie-ology in Fullerton, California, among others. With locations currently in the United States and the Philippines, James expects to operate 30 units by the end of the year, and to continue expanding into other countries.
Project Pie's schtick is the pizza quickie – custom-built, cooked in two minutes, served to guests in less than five minutes from the time of their order. Each creation is the same price, whether it includes two toppings or 26, and a gluten-free version is offered at no additional cost. The menu offers classic cheese pizza, a prosciutto and caramelized onion pizza and other white pizzas that come with no sauce.
In addition to pizza, Project Pie also serves salads and homemade desserts like Nutella and Banana Pizza and The Black and White. Several flavors of Boylan's fountain soda are also available.
Project Pie in Boulder is open 11 a.m. to 10 p.m. Sunday through Wednesday and 11 a.m. to 11 p.m. Thursday through Saturday.
