Santiago's, a Colorado-grown Mexican restaurant with 26 locations, has opened an outpost at 2907 Huron Street, close to the baseball stadium in the Prospect neighborhood. The small casual eatery is set in a brand new development next to Tokio.
Founded in 1990 by Carmen Morales, Santiago's spread from Brighton to Lakewood and Castle Rock to Fort Lupton, gaining loyal guests with its fresh burritos, tamales, enchiladas, and tacos. This fifth Denver location is open from 6 a.m. to 6 p.m. Monday through Saturday and closed on Sundays.
