Though currently in soft-opening mode, by early next week Aspen Juice will be ready to serve a selection of cold-pressed juices and healthy takeaway items and snacks in its new shop at 231 Milwaukee Street. The juices, which are the brainchild of business partners and college friends Julie Withers and Nhu Lam, have been available by order and at a couple local retail outlets, but this juice bar will offer expanded selections.

Sourcing nearly all the ingredients from Colorado farmers and vendors, the juices are made at a commercial kitchen in town, with the produce slowly ground to protect from unwanted heat and oxygen and then cold-pressed.

Though the menu will change either weekly or biweekly to provide a variety and reflect seasonal sourcing, look for a spicy lemongrass lemonade with chia seeds, kale green juice, and a very light version of almond milk with chlorophyll and cucumber.

Drawn to the Cherry Creek North area because of its walkability, Withers and Lam also want to cater to local office workers and apartment dwellers by delivering what they call an "urban picnic experience." To that end, fresh grab-and-go offerings like kale chips, various quinoa combos, and Vietnamese spring rolls on certain days round out the lineup.

Aspen Juice is located at 231 Milwaukee Street and is open Monday through Saturday from 8:30 a.m. to 4:30 p.m.
