Before Top Chef winner Hosea Rosenberg finally launched Blackbelly Market in Boulder in November, he gave fans a taste of things to come by serving breakfast out of his food truck, Darth Tater. Once the restaurant opened, however, the loyal following that was born for Rosenberg's breakfast treats had to take a hiatus.
This morning, Blackbelly opened its doors for breakfast. There are dishes like breakfast burritos, Belgian waffles, smothered tots, and fried egg sandwiches, as well as coffee and juices. There's no table service quite yet, but these items are served on weekdays between 7 and 11 a.m.
If all goes well, lunch will be added on Monday, January 12 and in a couple of months, brunch service will be offered as well.
