Chef Troy Guard Will Bring a New Los Chingones to the Tech Center

The first location of the popular modern taqueria is in the booming RiNo neighborhood.

Come June, chef Troy Guard, whose culinary empire keeps on expanding, will open a second location of Los Chingones in the Denver Tech Center. The new outpost will be housed in a brand new mixed use development located at I-25 and Belleview, on the West side of the highway. Alongside Los Chingones, the development will be home to retail and restaurants on the street level, commercial tenants on the first floors, and residents on the upper ones.

The brand new 3,500 square foot space will look significantly different than the first outpost. "I want to create spaces that are unique," says Guard who is in the process of hiring a designer for this new venture. The menu, however, will be similar and it will incorporate the changes that Guard is in the process of implementing at the RiNo location. "We are going to start to offer more shared dishes. We want groups to be able to order a pound of pork shoulder or goat or a whole chicken," the chef explains. This ordering format will also bring guests tortillas and all the salsas and condiments to build tacos.

Guard will also open a second location of Bubu in February in Lowry and is considering opening a new outpost for TAG Burger and perhaps a breakfast eatery in 2015.
