The Kitchen, which started out eleven years ago as Boulder's trendsetting farm to table spot, is growing once again. Co-founders Hugo Matheson and Kimbal Musk have committed to bringing Next Door, their casual version of the restaurant, to the Eastbridge Town Center in Stapleton. This new 3100 square foot restaurant will be the fourth Next Door location in Colorado.
Eastbridge Town Center is a development that brings shopping and dining attractions to the eastern edge of Stapleton on the corner of Martin Luther King Jr. Blvd. and Havana Street. Other restaurants and retailers to join Next Door in the new development include Los Chingones (a Mexican street food restaurant) and a breakfast eatery both owned by Troy Guard (of TAG, Guard and Grace and Bubu) as well as Wildflowers, Pilates Evolution, and Endorphin Fitness..
Next Door will serve lunch and dinner, plus happy hour seven days a week. The menu includes shared plates, sandwiches, salads, plates, sides and dessert, all approachable and affordable. A selection of beers, wines, and cocktails round out the offerings. The average ticket at Next Door is $15 for lunch and $20 for dinner.
The new restaurant is slated to open its doors to the community in November 2016. A search for a general manager and head chef for the new spot will start in May 2016.
