Torchy's Tacos, the Texas born sensation that got its start on wheels, pushed the opening of its first Denver location set at 1085 Broadway to January 12. Originally scheduled for early December, the launch party seems to have been delayed by construction woes.
Founded by Michael Rypka and boasting several locations throughout Texas, Torchy's has a loyal following. A Tex-Mex taco emporium, the casual eatery brings a wide range of options from migas to several other breakfast tacos to the "trailer park" taco loaded with fried chicken, green chiles, lettuce, pico, and cheese.
