On December 1, chef Justin Brunson will launch Royal Rooster, a pop-up chicken sandwich concept that will reside inside Old Major. During the week from 11 a.m. until 2 p.m., the LoHi restaurant will be home to the casual concept that features killer fried chicken thighs in a sandwich format.
Brunson shares that Royal Rooster will be a "casual, quick service set-up that will be simple, using the best ingredients we can get our hands on." Four sandwiches and one salad will be served, all prepared with Red Bird Chicken from Englewood, CO. Bonus: House-made buns and sides that include peanut oil fried french fries and caesar salad.
Royal Rooster aims to be quick and affordable, getting guests out the door for around $12. All items on the menu will be available to-go.
