The new year will see a flurry of restaurant openings, including the anticipated Cherry Hills Sushi Co. in a small strip of Cherry Hills Village off of East Hampden Avenue. Westword reported that the new sushi spot will be the brainchild and combined effort of husband and wife unit Bradford Kim and Olivia Maeng.Kim will be at the helm of the kitchen, bringing past sushi experience with him from SBE/Katsuya and Innovative Dining Group, i.e. the force behind Sushi Roku and Katana locations in Chicago, Vegas, and Los Angeles.
The 1,100 square-foot space is slated to open at 1400 E. Hampden Avenue in mid-January. Stay tuned for more details as the opening creeps closer.
