Late last year, the owners of the Humble Pie Store—Tamara Brink and Jessica Dolgan—announced they were closing their shop that got its start in Baker, and seeking a new, bigger location. A lease was eventually signed for a space at Colfax Avenue and Monroe Street, the site of the former Galaxie auto body building.
Now begins the construction phase in conjunction with Cerebral Brewing, which will also make its home in the historic venue. A hard-hat tour with Spectrum Design was recently conducted, with photos posted to the pie-maker's Facebook page that you can peruse in the above gallery.
With the build-out underway, the last word was an anticipated June opening. Once back in business, Humble Pie expects to roll out an expanded menu of both desserts and savory dishes, plus obtain a liquor license to have a full bar. A patio is also part of the plan. In the meantime, orders for special events are still being accepted.
