Opening Report: Organic Sandwich Company Rolls Into Boulder

Two sisters came together to bring Organic Sandwich Company to Boulder - fresh and GMO-free sandwiches. The shop (at the corner of 16th and Pearl Street) is now open daily from 11 a.m. to 6 p.m. Their debut was at the Boulder Farmers Market in 2014, with a huge success.

Co-owner, Marcy Miller, says she and her sister have a great culinary background. Between growing up in the kitchen and having her sister graduate from culinary school, this duet has good food to show the world. Organic Sandwich Company has been in the making for 10 years, but now the timing is perfect for the sisters to manage their own space:

My sister and I have entrepreneurship in our blood and we were ready to change the world - one sandwich at a time.

The menu is full of locally-sourced meats, cheeses, and breads. Why? Because knowing where your food is from is important to these sisters. The menu features sandwiches, fresh veggies, bread, soups, teas, kombucha, coffee, and house-made bacon jam. Another plus: there's a kids' menu.  Miller believes it is important to keep the kids in the healthy-food game:

The food world is a mess. There is so much unhealthy food out there, it's unbelievable. I like simple, good, wholesome food. Food you can pronounce and food who's source you know.

Instead of sitting around and hearing about all the pesticide, hormone, GMO-filled foods out there, Miller wanted to have an impact on the food choices people make every day. Their Boulder Farmers Market debut helped in great ways. The sisters met farmers and local vendors who they trusted to become a part of Organic Sandwich Company. They proudly get local ingredients from Altan Alma Organic Farm, Ela Family Farms, Oxford Gardens, Ploughshares Community Farm, Toohey & Sons, Silver Canyon Coffee, Pekoe Sip House, and more.

When it comes to the most popular item within the last few weeks, Miller said the turkey and bacon jam sandwich has taken the lead. The sisters are having the time of their lives serving up healthy sandwiches to Boulder.
