Chef Tim Payne is the latest and last addition to Avanti Food and Beverage Collective with his Farmer Girl concept. The eatery is about local and sustainable food prepared in an unpretentious ways that emphasizes products from artisans, farmers, and ranchers in Colorado and beyond.
The menu, which will tap into chef Payne's diverse culinary background, will change with the seasons. Payne owned and operated Terroir in Longmont and served as chef de cuisine at Z Cuisine. Most recently, he bought and began operating the Tasterie Food Truck. Avanti is set to open, along with its seven tenants, in May.
