Though the plan for Asian street food-inspired spot Cho77 was a late January or early February opening, there have been some hiccups to throw off that timeline. The last week of March is the new targeted date, and despite construction delays, that doesn't mean chef/owner Lon Symensma's second restaurant isn't making progress.
The bar top was installed on Thursday, as depicted above, and work continues on the kitchen and other details. A research and inspiration trip led Symensma and executive chef Ryan Gorby to Asia last year, where they picked up numerous items to be shipped home and incorporated into the casual South Broadway eatery—among them an authentic Vietnamese street cart.
Gorby also competed against four other chefs in the Ramen Throw Down last Thursday night at the Dive Inn, with the win going to Klaus Krebs of the Isle of Capri Casino. Ace Eat Serve's Brandon Biederman locked in a close second-place finish.
