If you're feeling "shellfish" next week, make sure to splurge on the $16 Lobster Roll from the Lobster Bliss food truck. The New England fare truck will make its debut at Civic Center Eats on Tuesday, May 26, the Denver Post reported.

Sustainable seafood gurus and founders of Lobster Bliss, Jeff Reebie and Rich Manzo, have created a menu filled with items like mac & cheese, tacos, cakes, and tempura skewers that feature the rusty-colored and clawed creature. The duo has a 2,500-galllon tank in the town of Erie that provides an "ideal ocean experience" for their imported lobsters. Happy lobsters make for happy customers, which there are bound to be many of starting next Tuesday.
