Rebel Restaurant Brings Foie Gras Pierogies and Kimchi Croquettes to RiNo

It's finally here.

Rebel Restaurant, originally slated to open last year inside of Black Shirt Brewing, officially opened in a nearby location for business yesterday after a soft launch over the weekend. The space, a former dive bar, reflects the grittiness of the neighborhood with modern, artistic touches from its owners Dan Lasiy and Bo Porytko.

The new menu includes Ukranian-inspired dishes like perogies (which Rebel makes with foie gras, beef tongue (beer and cheddar beef tongue, no less), and a whole lamb's head. There is also a rye pancake with fried chicken liver and a sunny side egg, eggplant with pickled stone fruit, and beef rib with Szechuan peppercorn. The menu even includes a doughnut for dessert, served with peach jam, Nutella mousse, and pink peppercorn.
