New Mexican Restaurant to Replace El Rincon in Aspen

Previously known as The Cantina for 28 years, the space where El Rincon dishes its fare is changing ownership.

By December, Aspen locals Darren Chapple and Adam Malmgren will open their new Mexican restaurant in the space where El Rincon has been operating, the Aspen Times reported. The existing restaurant, owned by Aidan Wynn, was known as the Cantina for nearly three decades. Wynn will close the doors in September.

Chapel and Malmgren, who signed a 15 year lease on the space located at 411 E. Main Street, are industry veterans who have worked in Mexican restaurants both in Aspen and in Southern California. They are excited to "make some good Mexican food in a comfortable place."
