Comida, the modern Mexican taqueria brainchild of Rayme Rossello, will open an outpost at the Stanley Marketplace next spring. What started out as a flaming pink food truck named Tina now has two brick and mortar locations, a first one in Longmont's Prospect neighborhood and a 2013 addition inside the Source in RiNo.
At the Stanley, Comida will bring its Mexican street-food-inspired fare to a 3,500 square foot space that will feature an outdoor patio overlooking Westerly Creek and the development's large green space. This third Comida will feature the same daily cocktail and food menus as the other Cantinas, and will include antojitos (or "street snacks"), tacos, tortas, tostadas and more.
"I am really proud of my first two locations; they are part of communities that stretch people's ideas of how dining and living can be experienced," Rossello said in a press release. "They both thrive because of the energy and creativity that surround them."
Other restaurants joining the Stanley include Rosenberg's Bagels & Delicatessen, Good Bird Kitchen, Sazza, and Happy Cakes.
