The Aspen outpost of the New York City-based restaurant is helmed by executive chef Matthew O'Neill, formerly the executive chef at the Ajax Tavern in the Little Nell hotel. The restaurant is focused on a modern American style of cooking, featuring all-American ingredients with items sourced locally in Colorado along with an inspired beverage program and crafted cocktails.
