According to a recent article in The Denver Post, Bradford Heap, acclaimed chef at both Salt in Boulder and Colterra in Niwot, will be opening a new seafood restaurant next month in Boulder. Heap's newest culinary endeavor will make its home in the former Juanita's and more recently PastaVino space on the western edge of Pearl Street.
Wild Standard will source the finest ingredients available, with an emphasis on seafood and vegetable-forward dishes. The new concept will also incorporate innovative touches like an oyster bar, dim sum-style cart service for smaller dishes, choose-your-own-alcohol-level cocktails, and a private dining room known as Pearl Dive. The anticipated opening is currently slated for mid-September.
