While restaurants and bars are opening or closing left and right, Mezcal's owners, husband and wife team Chris Swank and Loris Venegas, found that it was time for a reset. Earlier this summer, they closed the 12 year old spot for a massive remodel. Mezcal reopened late last month with a facelift to the interior and an upgrade to its food and cocktail offerings.
The biggest changes to the East Colfax modern Mexican spot are upgrades that guests can't see but will feel. The kitchen was virtually rebuilt and a new chef, Chris Douglas, brought in to reimagine the menu and craft dishes that regulars and newcomers alike will love. Highlights from chef Douglas's creations include the seasonal sweet roasted corn soup (huitlacoche, guacamole, grilled cherry tomatoes, crema) and the irresistible pork belly tacos (pork braised in piloncillo and caramelized chiles with carrot and cabbage slaw topped with thinly sliced fresh jalapeños).
