A new bar, eatery, and live music venue joined the East Colfax scene. Red Octave Kitchen and Bar is the brainchild of restaurateur Phil Long and chef David Sanchez, both of whom have spent a good part of their careers in hospitality in the mountains in Vail and Beaver Creek. The duo has taken over the former Cork House space at 4900 East Colfax and gave it new life as a hub for simple American and Italian food and live tunes from local bands.
The menu ranges from comfort classics like the Cobb salad, a burger, and baked mac and cheese to Italian dishes with a twist like the gnocchi and Tuscan chicken. A bar menu offers booze-friendly snacks like a salumi and cheese plate, arrancini, and poutine. With a living-room like atmosphere, this new spot offers a no-fuss lunch and dinner option seven days a week, complete with music performances from owner Phil Long and other local talent.
