While you are plotting your conquest of migas on February 1 at the first outpost of Torchy's Tacos in Denver, there is more good news: The Austin-born cultish Tex-Mex spot will open four additional locations in Colorado before the end of 2016. The first of those will be in Fort Collins in the Foothills Mall redevelopment area at South College Avenue and Foothills Parkway in midtown Fort Collins.
Following this May opening, Torchy's is pursuing three more locations: Stapleton at 8281 Northfield Boulevard, Westminster at Wadsworth Boulevard & West 88th Avenue, and Greenwood Village at 8505 East Arapahoe Road.
Colorado is the first state that the Texas group has pursued for expansion. The geographical proximity, but also the active lifestyle of Denverites, the solid music scene of the city, and the great outdoors were among the reasons why Torchy's chose to bring its tacos north.
