Capitalizing on the brunch buzz that lines sidewalks scattered throughout Denver for hours at a time on weekend mornings, Daniel and Kristen Cofrades are doubling down on their Early Bird dining concept, bringing the Westminster-born breakfast to Greenwood Village this spring.
East West Partners announced the breakfast-brunch-lunch restaurant, which opened its original location in 2012, will begin serving up its local, fresh fare to residents and visitors of The Landmark (5425 Landmark Place) later this year. This outpost will include a full-service bar, private dining room, and the largest outdoor patio in the retail complex, covering 1,000 square feet. The indoor space will be more than 4,000 square feet, to seat 175 guests, and will feature an open-kitchen and friendly service from the roughly 45 employees that will come along with the opening.
Much of the menu will remain constant with the Westminster location, with original dishes such as the Early Bird Risers – open-faced puffed omelets. Classic menu options range from biscuits and gravy to buttermilk pancakes. Breakfast will be served all day. For lunch, visitors can anticipate salads, sandwiches, stuffed waffles, with inside ingredients such as braised meats, eggs or fruit.
For the early imbibers, the bar will feature traditional morning cocktails, and some with a more creative kick, such as the white peach tequila sangria. For a less boozy brunch, sparkling matcha iced teas will also make a menu appearance.
