GoodBird Kitchen, the fried chicken emporium that first hatched inside the Post Brewing Company in Lafayette a year ago, is ready to launch in Longmont. On Tuesday, January 5, a second location, set at 1258 Hover Road will officially open.
The goal of this new spot is to bring the fun and comfort to the dining room with large booths, picnic tables , a full bar, and a patio for warmer days. Counter service will be available upon walking in and full service offered once guests are seated. A roaming cart will keep the cold brews flowing while diners enjoy items similar but not identical to those offered at the original location. GBK Longmont features complete platters that are ready to dig into or take home. Platters like the Fried and Rotisserie, mainstays on the menu, include a main dish, a side, and a biscuit. The casual eatery will be open daily from 11 a.m. to 9 p.m.
As GoodBird Kitchen spreads its wings on the north side of Denver, owner Dave Query announced that he pulled out the previously announced outpost at the Stanley Marketplace. The longtime restaurateur shared that the departure of GoodBird from the upcoming Aurora development was mutually decided on and leaves no party with hurt feelings or bruised wings.
Set to open later this year, the Stanley still has an impressive roster of tenants, including Casitas Brewing, Rosenberg's Bagels & Delicatessen, Comida, Rolling Smoke BBQ, and Happy Cakes Bakeshop.
