Cocktail wiz Stuart Jensen started out at Curio at the Denver Central Market as a consultant and now, almost a month into the life of the bar, he is a third owner in the venture. Katsumi Yuso Ruiz and Stephen Julia, the co-founders of the bar who also own the Green Seed inside the market, are glad to have him on board.
"We couldn't be happier to have his expertise added to our team," Katsumi Yuso Ruiz said. "We're super excited to continue to develop our cocktail program with him on board."
Jensen was the bar manager at Mercantile Dining & Provision from the restaurant's opening until a few months ago. Before that, he was bar manager at Larimer Square's Green Russell. In addition to launching his beverage consulting and events company Vigilante Cocktails, Jensen worked as a brand ambassador for Aviation American Gin, designed the bar program at the Big Wonderful, and participated in several competitions including Diageo World Class and Bombay Most Imaginative. He comes from an extensive culinary background, including stints at ChoLon and TAG.
