Dio Mio opens its doors tonight in the RiNo neighborhood at 3264 Larimer Street. Brainchild of chefs Alex Figura and Spencer White who previously worked together at Lower 48, the new venue is a modern eatery rooted in Italian culinary culture.
The simple space that features natural wood accents and a variety of white and black elements can seat up to 46-seat guests. The chefs are introducing a rotating dinner menu that includes small plates and salads, like the octopus and potato spiedino and the fennel salad, a mix of traditional and experimental pasta dishes, including the stunning mint fazzoletti (pictured in the gallery), as well as alternating large format dishes, like porchetta, which comes with Hawaiian buns, pickles chimichurri, and fonduta.
The beverage program brings a small but interesting wine list, batch cocktails, craft beer, and select Italian spirits. Those in need of a jolt of caffeine will be please with the espresso-only program, crafted with beans from independent roasters around the country, Colorado-born Middle State being the current one.
To start out, the hours of operation are 4 to 9 p.m. from Sunday through Thursday and 4 to 10 p.m. on Friday and Saturday. When lunch service starts on December 5, Dio Mio will open at 11 a.m. daily.
