Acclaimed bartender Bryan Dayton, the beverage and hospitality half of Boulder’s acclaimed Oak at Fourteenth and Denver’s Acorn and Brider, will branch out on his own with a concept on the west side of Pearl Street in Boulder. Dayton, who will continue to own and operate his existing award-winning businesses in partnership with chef Steven Redzikowski signed a lease for a space at 1023 Walnut Street (Suite #400), in a brand new development.
Dayton is tight-lipped on the concept but we do know that the restaurant will be situated on the rooftop level of the building, offering guests one of Boulder’s only unobstructed mountain views of the Flatirons.
"When I first moved to Boulder in the mid-nineties, I remember the incredible views at West End Tavern – which, unfortunately, are now blocked by new construction," he shared. "When the opportunity [at PearlWest] came to me, I couldn’t pass it up. It’s an unbelievable space and I’m thrilled to be able to bring those mountain views back to the Boulder community. We have a ton of new energy here, a lot of passion – it’s an exciting new chapter."
While Dayton's longtime business partner Steve Redzikowski will not be involved with the day-to-day of the project, he has consulted on kitchen design and other operational matters, and remains supportive. "My passion lies in the kitchen and I will continue to stay focused on our current projects while offering any support Bryan might need in Boulder," the chef explained.
The new concept is expected to debut in early summer 2017.
