Chefs Troy Guard and Hosea Rosenberg Get in the Super Bowl Game

From coast to coast, the two prominent local chefs are representing the Mile High City as the Denver Broncos aim to bring the Super Bowl trophy home.

Hosea Rosenberg, the chef and owner of the popular Blackbelly Market is headed to New York this week to represent Denver and the Broncos on the Today Show on Friday, February 5. Rosenberg will be going up against a local chef representing the Carolina Panthers in a championship game cook off, live on the morning show. The dishes Rosenberg plans to prepare are

  • Super Nachosblue corn tortillas topped with shredded chedar cheese (hello Bronco orange), smoked pork green chile, crispy Blackbelly bacon bits, and roasted tomato salsa.
  • Broncos sliders: Colorado bison patties topped with strips of green chili, Blackbelly bacon, and melted smoked provolone, served on a bed of fritos - united in Fritos orange we are!). The segment will air during the 9:30 a.m. half hour.

On the other side of the country, chef Troy Guard, whose empire includes popular spots TAG, Guard & Grace, and Los Chingones, will represent the city of Denver at the annual Taste of the NFL, Party with a Purpose to raise funds for hunger relief in New England. Super Bowl 50 marks the 25th anniversary of Taste of the NFL, which has raised $24M to date. Chefs from each city with an NFL team will set up stations that will also be graced by a football alum. Guard's table will welcome Karl Mecklenburg.

The star-studded event will take place on Saturday, Februrary 16 at the Cow Palace venue and Guard's dish is lamb neck with gnocchi, squash puree, and a roasted carrot dressing. Tickets for the event that starts at 7 p.m. and gathers some 2500 guests are $700.  Bonus: Third Eye Blind will perform a 60-minute set beginning at 9 p.m. More information is available online.
