Borealis, a breakfast, lunch, and dinner restaurant, will open at the end of this month inside the Hyatt Regency Aurora-Denver Conference Center. Tim Freeman, a chef that has a few things to brag about is leading the kitchen. In the last season of Beat Bobby Flay, which aired in January on the Food Network, Freeman beat the celebrity chef in a contest revolving around Pad Thai. The chef worked alongside Wolfgang Puck, as well as in the White House and in places as far and wide as Kenya and Russia.
At the new restaurant in Aurora, Freeman describes his menu as grounded in local Colorado ingredients, enhanced by global taste. Menus will be updated seasonally and including special dietary options and kid-friendly menus. A large outdoor terrace, featuring fire pits and couches will give guests an extra reason to linger and enjoy some of the local beers or signature cocktails offered.
