The Pig & The Sprout, a second restaurant from Andy Ganick, owner of Stapleton's pork-centric Berkshire Restaurant, will open its doors next month. Set at 1900 Chestnut Street behind Union Station, the fine-casual eatery will launch with an eclectic menu of both hearty and light items.
Chef Rhett Clark, formerly of Mercantile Dining & Provision shared that dishes will include house-ground hamburgers, (like the Redneck, with bacon and bourbon ketchup), bavette steak with green garlic soubise and shitake mushrooms, but also salads like the cauliflower and farro and a tofu French dip made with locally foraged mushrooms.
The Pig & The Sprout's design is the result of collaboration between Patrick McMichael of MDS Architect, Inc. and Jenne and Adam Wicht of design firm Sourced By Good (Sonoma, CA).
