Potbelly Sandwich Shop, a Chicago-based chain with cultish following opened its first location in Boulder at 1685 29th Street. The Boulder shop opened on Tuesday in a space set between Peet's Coffee & Tea and Native Foods Cafe. As it does at its 300+ stores nationwide, this outpost serves toasty warm sandwiches, milkshakes, salads  that are made-to-order plus live, local music.

Live music has been a part of the Potbelly experience since the first shop opened in 1977, an unusual twist to a fast-casual lunch. Interested performers in and around Boulder are encouraged to get in touch with the new shop manager to apply and to schedule an audition.

Potbelly Boulder is open from 11 a.m. to 10 p.m. daily and will launch delivery service will start approximately a month after opening.
