Fort Collins is about one month away from having a brand new bird in town: Music City Hot Chicken will fire up the fryers and open to the public at 111 Prospect Road on April 3.
The holy union of fried chicken and cold beer is the theme here, with many of said cold beers being sourced from Fort Collins-based breweries like New Belgium, Black Bottle, Odell, and other local favorites. The fried chicken will bring the heat, literally (the hottest increment is said to be nearly unbearable) and will be served in the classic fashion, atop a piece of red and white checked parchment paper in a nostalgic plastic basket. The hot and fried bird will come with the required pickle accoutrement, as well as sides like mac n' cheese, collards and potato wedges.
The team at Music City, a name that references Nashville and its famed fried hot birds, has been working hard in the incubation period - building bar tops, painting tables with custom designs, and even inviting the local breweries by for test run beer and chicken mash-ups.
