A modern pig-centric taqueria called Cochino will open at 3495 S. Downing Street in Englewood, the Denver Post reported. Brainchild of restaurateur Johnny Ballen, who owns LoDo's the Squeaky Bean, Cochino will serve lunch and dinner daily, plus weekend brunch in a space that seats 60 people inside, including at the bar, and another 36 to 40 on the patio.
The new restaurant will feature repurposed furniture, salvaged decorative details from other restaurants, including the globe lights that hung in Rioja before its remodel, and a rare Bevador cooler from the 1950s. Chef Vinny Sosa of Work & Class is consulting on the menu.
