Blackbelly Butcher, a whole animal butcher shop, small grocer, plus breakfast and lunch eatery is now open at 1606 Conestoga in Boulder. The new attraction, helmed by chef/owner Hosea Rosenberg and butcher Nate Singer, is the sister spot to the popular 18 month old Blackbelly Market next door.
In its white subway tile-clad 2,000 square foot space dotted with wooden tables and black chairs, Blackbelly Butcher offers guests custom cuts, fresh sausages, bacon, salumi on the meat side. The goal is to provide an interactive experience where patrons get guidance from the butcher about their desired beef, lamb, or pork order and have a chance to experiment with less-known cuts.
The dine-in morning and noon service, which just moved over from next door, is bringing expanded menus with sandwiches, burritos, cookies, and more. A patio menu of snacks from the kitchen, cocktails on tap, beer in cans and wine by the glass will be offered for happy hour.
A cold case is stacked with grab-n-go pre-made sandwiches and fresh salads as well as soups, terrines, sauces and more. The shelves are getting decked out with housemade sundries including brine kits, rubs, pickled vegetables and jams, all prepared to complement the butcher offerings for the at-home cook.
Blackbelly Butcher is open from 7 a.m. to 7 p.m. on weekdays with limited weekend hours for the time being.
