Starting this weekend, The Ritz-Carlton, Bachelor Gulch will host pop-up dinners featuring Denver chefs.
Justin Brunson, of Old Major and Masterpiece Kitchen, will prepare a four-course dinner Friday and Saturday, July 22-23. The dinner will be served in the hotel restaurant The Grill from 5 to 9 p.m. and will include Vietnamese beef tartare, pan-fried Lake Michigan Walleye, pork and lobster grits, and pork pot de crème.
Chef Lon Symensma, of ChoLon, will guest chef August 19-20; his menu has yet to be announced.
Meantime, the luxury hotel is gearing up for the opening of its newest restaurant around November, the details of which are being finalized with the chef and concept yet to be announced.
In April, Spago by Wolfgang Puck served its last dinner at The Ritz Bachelor Gulch, parting amicably with the hotel after nearly a decade operating in Beaver Creek.
The prix fixe pop-up dinners in July and August start at $55, and reservations can be made by calling (970) 748-6200.
