Auraria Campus Students Get Their Own Fat Jack's Supersubs

For its newest location, set on the Auraria Campus, Fat Jack's Subs has introduced a new concept. The signature subs are still a major highlight and the bulk of the busienss but there are also breakfast options from Rosenberg's Bagels, Little Man Ice Cream by the scoop, and Cinnaholic Gourmet Cinnamon Rolls (100% vegan). Locally roasted Novo coffee and brews from Denver's Happy Leaf Kombucha are also part of the offerings.

"It's always exciting when we open a new store," said Kyle Fabra, who co-owns Fat Jack's with his wife Brooke. "We have the opportunity to customize each location to the specific area. I think students and faculty on the Auraria Campus will appreciate a locally-based sub shop that is fast and serves fresh ingredients, as well as all of the offerings we have available from other food vendors."

The new shop intends to provide paid and unpaid internships to students of business, marketing or hospitality at the Auraria location. The store will also offer bicycle delivery on campus, and plans to have live music on select days of the week.
