Look Inside SOL Cocina, Cherry Creek's Newest Mexican Restaurant

This Baja-inspired Mexican eatery launches on Monday

Newport Beach-born SOL Cocina, an eatery helmed by James Beard award-nominated cookbook author and chef Deborah Schneider, is finally opening its doors in Denver. A posh modern Mexican spot, the restaurant has three other locations in California and Arizona. The Mile High City one is located in Cherry Creek North at 250 Columbine Street.

The new eye-catching exhibition kitchen in Denver is led by head chef Lou Ortiz, formerly of Los Chingones, among others. Signature items on the menu include the hot and raw tropical ceviche, a spicy raw fish ceviche with fresh lime and orange, habanero chiles and tropical fruit, avocado, cucumber and pico, served in a tall glass with sweet potato and red beet chips. Guests will also find specialty tacos, platillos, tortas, burritos, and more. Vegan and gluten-free-friendly, SOL makes more than 34 fresh salsas daily. Dinner is served daily starting at 4 p.m.; lunch and brunch will be added to the offerings at a later time.
