Boulder’s Motomaki Expands With West Colfax Outpost

There will be giant sushi rolls

Two year old Motomaki, a company that got its start in Boulder, is growing with an outpost in Lakewood, Westword reported. A second location will launch later this fall at 14650 West Colfax Avenue in a space that previously housed the vegan-friendly Native Foods.

A fast-casual concept, Motomaki specializes in giant sushi rolls that come foil-wrapped like a burrito. Guests have the ability to choose from a menu or to get creative and build their own. The set items include favorites like the Nacho Tuna, a combination of spicy tuna, tempura asparagus, cucumber, mango salsa, guacamole, crispy onions, sour cream, and sriracha aioli and the Hawaiian Salmon, which includes salmon poke, bacon, grilled asparagus, avocado, cucumber, crispy onions, moto slaw, and sriracha aioli.

Also on the menu are a variety of salads and a poke selection, alongside non-alcoholic beverages plus wine and sake. A kids menu for the 12 and under crowd is available.
