Early Bird, a Breakfast and Lunch Eatery, Heads South

An outpost of the restaurant will open in Greenwood Village

Four year old Early Bird Restaurant is spreading with wings with a second location at The Landmark in Greenwood Village. Owners and veteran hospitality professionals Dan and Kristen Cofrades, who continue to successfully operate their Westminster location, will launch this south-side encore in the next few weeks.

The casual eatery will serve breakfast, lunch, and brunch and it aims to bring the same simple and thoughtful food created with organic ingredients to this part of town. On the breakfast menu, there are eggs cooked in a variety of ways, pancakes and oatmeals and granolas, and also things like breakfast tacos and huevos rancheros. For lunch, guests can get soups, salads, and sandwiches, plus decadent items like the shrimp and grits and the fried chicken. A brunch menu adds even more variety to the restaurant's offerings.

The name Early Bird was inspired by the couple's daughter Isabel, who was born prematurely at 33 weeks.
