Just down the road from Denver, Colorado Springs will count IV by Brother Luck, among its new restaurants this spring. Set at 321 N. Tejon Street, the upcoming venue is the creation of chef Brother Luck, who at one point won Food Network's Beating Bobby Flay and made it to the final of a Chopped episode.
Luck's restaurant is focused on New American fare concentrated on the historical cuisine of the four corners region where Utah, Arizona, New Mexico and Colorado touch boarders. There is a Native American aspect to this future menu but also one that pays homage to the stepping stones of American cuisine in a way that perhaps only Arcana in Boulder has strived to acknowledge.
"The four corners region has been influenced by Western European, Spanish Colonial, Native American and Latin American cuisine," the chef said. "I look forward to to showcasing an offering that differs from typical southwestern food and view the menu at IV as a hybrid of cultural influence."
From menu to the name, which bears multiple meanings to Luck, this is a very personal project. "This restaurant is really a reflection of my identity. I want to tell stories of my travels and experiences through the food we serve. Each course will take patrons on a culinary journey, and for those who want a deeper experience, I will host a chef’s table in the kitchen," said Luck.
That chef's table will likely seat up to 12 guests and patrons will enjoy an exclusive menu experience, created daily only for these special guests.
What's in the name? Four (written in Roman numerals simply for aesthetics) is about the four key people that contribute most to the restaurant (hunters, gatherers, farmers and fishermen), about the four menus that will be introduced yearly, and about Luck’s lineage; he is of the fourth generation in his family to have the name Brother Luck.
